Pinto beans are the number one bean in America and are most commonly enjoyed in Southwestern dishes, like refried beans, bean soup or pinto beans and rice. You can also use them to add body to a wide variety of soup-based meals. Aside from being delicious, they’re also an excellent source of fiber, making them a great choice for family dinners or entertaining.

Directions
Rinse and remove any foreign material from beans.

Stovetop – to prepare 1 lb. dry beans
1. Soak beans. Choose Quick or Overnight.
A. Quick – Bring 8 cups water and beans to a rapid boil. Boil 2 minutes. Remove from heat; cover. Let stand 1 hour; drain and rinse.
B. Overnight – Cover beans with 8 cups water. Let stand 6 to 8 hours; drain and rinse.
2. Cook beans. Bring 6 cups water and soaked beans just to a boil; reduce heat and cover. Simmer gently over LOW heat 1 to 2 hours or until beans are tender. Drain.
